Air Fryer Ground Turkey Stuffed Delicata Squash

INGREDIENTS

• 2 medium delicata squash (halved lengthwise and seeds scooped out)

• 1 lb ground turkey (preferably organic or pasture-raised)

• 1 small yellow onion, diced

• 3–4 cloves garlic, minced

• 1 (14.5-oz) can diced tomatoes (no added sugar or salt preferred)

• 1 tsp smoked paprika

• 1 tsp oregano

• ½ tsp black pepper, or to taste

• ½–¾ tsp sea salt (Celtic or Himalayan)

• ¼ tsp crushed red pepper flakes (optional, for heat)

• 1 tbsp olive oil (for sautéing)

• Optional topping: nutritional yeast or a sprinkle of grated Parmesan for extra flavor

INSTRUCTIONS

Prep the squash: Halve the delicata squash, scoop out seeds, drizzle with olive oil + salt, and air-fry cut-side down at 375°F for 10–12 minutes.

Make the filling: Sauté onion in olive oil until soft. Add garlic for 30 seconds. Add ground turkey and cook until browned. Stir in tomatoes, paprika, oregano, salt, pepper, and red pepper flakes. Simmer 5–7 minutes until slightly thickened.

Assemble + cook: Spoon turkey mixture into the squash halves. Air-fry again at 375°F for 8–10 minutes until the tops are browned. Optional: Top with nutritional yeast or Parmesan.
